Chicken and broccoli casserole

This is a recipe I originally got from my sister-in-law. I jiggered around with it a bit, and came up with two versions: the I’ll take a few more minutes and do this properly version, or the I’ve only got time to grab a few things on the way home version. I much prefer to take the little extra time and trouble for the first version, but the truth is, if you’re like most of us these days, you’ll be lucky if you’ve got two minutes to scratch yourself somewhere between finishing work and getting dinner on the table, which is where the second version has some virtue, and still gives an acceptable result.

In any case, if you’re like me, any way you can try and trick some broccoli into the kids is worth it. You might get away with it.

The I’ll take a few more minutes and do this properly version

What do I need?

  • 1 whole fresh chicken
  • Butter
  • ¼ cup of white wine
  • Broccoli
  • 1 cup of chicken stock
  • 1 cup of sour cream
  • 2 generous Tbsp plain flour
  • 1 tsp curry powder
  • Spring onions
  • ½ cup grated cheese
  • 1 tsp paprika

What do I do?

Cut the chicken into pieces. Melt the butter in the pan until it starts to foam, then fry the chicken pieces until they’re golden. Put the chicken into a large bowl. Add the white wine to the juices and butter, bring it to the boil, and cook until the wine is mostly evaporated. If you just happen to have poured too much wine, well, I guess you’ll just have to drink the rest while you’re cooking.

Blanch the broccoli in boiling water for a minute or two, or even better, microwave for about the same time. The idea is not to cook the broccoli completely, just partially cook it so that it’s still firm and crisp, but has turned a nice shade of green.

Combine the pan juices, stock, sour cream, plain flour and curry powder, and whisk the mixture until it’s smooth.

Combine the chicken, broccoli, spring onions and sauce mixture, then put them in a casserole dish. Throw the grated cheese over the lot, sprinkle with paprika, then bake in the oven for 40 minutes.

Serve with some rice or pasta.

What do I need?

  • 1 whole cooked chicken (the sort you can grab at the supermarket)
  • Broccoli
  • 1 can cream of mushroom soup
  • 1 cup of sour cream
  • 2 Tbsp plain flour
  • 1 tsp curry powder
  • Spring onions
  • ½ cup grated cheese
  • 1 tsp paprika

What do I do?

Cut up and strip the cooked chicken. Blanch or microwave the broccoli (see the note above, about not overcooking). Combine the soup, sour cream, flour and curry powder, and whisk until smooth. Combine the chicken, broccoli, spring onions and sauce mixture, then put them in a casserole dish. Throw the grated cheese over the lot, sprinkle with paprika, then bake in the oven for 40 minutes.

Serve with some rice or pasta.
